It was a family affair. Besides the food preparation for the dinner, we started the day getting the menu printed and the kids had fun preparing the New Year Cards for all the guests. Wife bought some white lilies for the dining room and ensured the place was warm and cozy for the year end party.

I started the food preparation 3 days before the dinner. 24 hours to brine the pork belly, 24 hours in the Sous Vide machine and another 24 hours in the fridge. The menu for the evening was posted here. The portion was just nice compared to last year's degustation menu (Might not be enough for Richie though.. LOL)
Preparation, cooking and assembly were all done on the same table top. Suddenly I wanted a much bigger kitchen! There was literally no space to lay out all the serving bowls and plates.

I am ending this on a serious note... Time flies and each year this new year time, people make resolutions to change aspects of themselves they believe are negative. A majority of people revert back to how they were before and feel like failures. This year I challenge you to a new resolution. I challenge you to just be yourself and be contented.
Enjoy your life and spend more time with the kids before they grow up so very quickly. Enjoy your time with your parents before they grow old so very quickly. Do not forget that we all need friends even as we age so very quickly ourselves.
